Sauteed Amaranth Greens

Stir-fried greens is an easy addition to any weeknight meal. Growing up, most dinners we had always included the combination of rice, soup, vegetables, and a protein. Amaranth greens grow very fast and are abundant in size and quantity. They have a spinach-like quality and cook quickly once heat is applied. This stir-fry recipe can be applied to any leafy vegetable you have on hand, in your fridge!
Ingredients:
4 cups Amaranth Greens with or without stems
½ tbsp Cooking Oil
1 tbsp Garlic, minced
½ tbsp Fish Sauce
Fried Shallots (optional)
Instructions:
Heat your pan up with cooking oil.
Once hot enough, place the amaranth greens into the pan and cover to steam the greens for about 1-2 minutes.
Uncover and add minced garlic and continue to cook until the leaves are wilted.
Cut the heat and add a splash of fish sauce.
I love to serve sauteed vegetables with fried garlic or shallots on top!
Serve along with rice, soup, and a protein.
